Ingredients

  • 2 cups baby spinach, 2 eggs (poached), 1/2 avocado (sliced), 1/4 cup quinoa, 1/4 cup edamame, 2 tbsp pumpkin seeds, Green goddess dressing (1/4 cup Greek yogurt, 1/4 cup mixed herbs, 1 tbsp lemon juice, 1 clove garlic)

Instructions

1. Make dressing by blending yogurt, herbs, lemon juice, and garlic. 2. Layer spinach and quinoa in bowls. 3. Top with poached eggs, avocado slices, and edamame. 4. Sprinkle with pumpkin seeds. 5. Drizzle with green goddess dressing.
