Ingredients
- 1 cup barley, 1/2 cup kale, 1/4 cup roasted sweet potatoes, 1/4 cup black beans, 1/4 cup corn, 2 tbsp lemon tahini dressing, sunflower seeds
Instructions
- Cook barley. Sauté kale. Roast sweet potatoes. Layer barley with kale, sweet potatoes, beans, and corn. Drizzle with lemon tahini dressing and sprinkle with sunflower seeds.
