Barley Kale Buddha Bowl Recipe

Ingredients

  • 1 cup barley, 1/2 cup kale, 1/4 cup roasted sweet potatoes, 1/4 cup black beans, 1/4 cup corn, 2 tbsp lemon tahini dressing, sunflower seeds

Instructions

  1. Cook barley. Sauté kale. Roast sweet potatoes. Layer barley with kale, sweet potatoes, beans, and corn. Drizzle with lemon tahini dressing and sprinkle with sunflower seeds.
