BBQ Tempeh Buddha Bowl Recipe
Ingredients:
1 cup quinoa, 1/2 cup BBQ tempeh (cubed), 1/2 cup corn, 1/2 cup black beans, 1/4 cup red onion (diced), BBQ sauce
Instructions:
Cook quinoa according to package instructions. Sauté tempeh cubes in BBQ sauce. Combine quinoa, BBQ tempeh, corn, black beans, and red onion in a bowl. Drizzle with additional BBQ sauce.
Notes:
Add a sprinkle of shredded cabbage for crunch. Serve with a side of coleslaw.
