Ingredients

  • 1 cup quinoa, 1/2 can black beans, 1/4 cup corn, 1/4 cup red onion, 1/4 cup diced tomatoes, 1/2 avocado, lime juice, cilantro

Instructions

  1. Cook quinoa. Combine black beans, corn, red onion, and tomatoes. Layer quinoa with bean and veggie mixture, avocado, and garnish with lime juice and cilantro.
