Ingredients

  • 1 cup falafel mix (prepared), 2 eggs (poached), 1/2 cup cherry tomatoes (halved), 1/4 cup cucumber (diced), 1/4 cup hummus, 2 tbsp tahini sauce, 2 pita bread (warmed), 1 tbsp za’atar spice

Instructions

1. Cook falafel according to package instructions. 2. Arrange falafel, poached eggs, tomatoes, and cucumber in bowls. 3. Add a dollop of hummus and drizzle with tahini sauce. 4. Serve with warm pita and sprinkle za’atar on top.

Add pickled turnips or olives for extra tang. Use baked falafel for a healthier option.
