Ingredients

  • 1 cup sushi rice, 4 oz smoked salmon (cubed), 1/2 avocado (sliced), 1/4 cup edamame, 1/4 cup cucumber (diced), 2 soft-boiled eggs, 2 tbsp soy sauce, 1 tbsp sesame seeds

Instructions

1. Cook sushi rice and let cool. 2. Arrange rice in bowls. 3. Top with smoked salmon, avocado, edamame, cucumber, and soft-boiled eggs. 4. Drizzle with soy sauce and sprinkle sesame seeds.

Add seaweed salad for an authentic touch. Use brown rice for added fiber.
