Ingredients

  • 1 cup quinoa, 1/2 cup black beans, 1/4 cup corn, 1/4 cup bell peppers, 1/4 avocado, 2 tbsp chipotle sauce, lime wedge

Instructions

  1. Cook quinoa. Mix black beans, corn, and bell peppers. Layer quinoa with black bean mixture and avocado. Drizzle with chipotle sauce and garnish with lime wedge.
