Citrus Chickpea Buddha Bowl
Ingredients:
1 cup bulgur, 1 can chickpeas, 1/4 cup shredded carrots, 1/4 cup red cabbage, 1/4 cup cucumber, 2 tbsp citrus dressing, parsley
Instructions:
Cook bulgur. Roast chickpeas. Layer bulgur with chickpeas and veggies. Drizzle with citrus dressing and garnish with parsley.
