Ingredients

  • 1 cup quinoa, 1/2 cup chickpeas, 1/4 cup shredded carrots, 1/4 cup cherry tomatoes, 1/2 avocado, 2 tbsp tahini dressing, cilantro

Instructions

  1. Cook quinoa according to package instructions. Layer bowl with quinoa, chickpeas, carrots, cherry tomatoes, and avocado. Drizzle with tahini dressing and garnish with cilantro.
