To make these nuggets, cut one pound of chicken breast into bite-sized pieces. Dip each piece into beaten eggs, then coat with a mixture of one cup of shredded coconut and one cup of breadcrumbs. Ingredients

  • 1 lb chicken breast, cut into nuggets, 1 cup shredded coconut, 1 cup breadcrumbs, 2 eggs, beaten, Salt and pepper to taste

Instructions

  1. Preheat oven to 400°F. Dip chicken pieces in egg, then coat with a mixture of coconut and breadcrumbs. Place on a baking sheet and bake for 20 minutes until golden brown.
