Ingredients

  • 1 tbsp coconut oil, 1 onion, chopped, 2 cloves garlic, minced, 1 tbsp curry powder, 1 can coconut milk, 2 cups mixed vegetables (carrots, peas, bell peppers), Salt to taste

Instructions

  • Heat coconut oil in a pan, sauté onion and garlic. Add curry powder, coconut milk, and vegetables. Simmer for 20 minutes until vegetables are tender.
