Ingredients

    1 cup pink pitaya (dragon fruit), peeled and cubed 1/2 cup coconut milk yogurt 1 cup coconut milk 1 tbsp honey 1/4 cup shredded coconut 1 tsp vanilla extract 1 cup ice cubes

Instructions

  1. 1. Add pink pitaya, coconut milk yogurt, coconut milk, honey, shredded coconut, and vanilla extract to the blender.

    Add ice cubes.
    Blend on high speed for 2-3 minutes until smooth and creamy.
    Pour into glasses and sprinkle with additional shredded coconut if desired.
    Serve immediately.
