Ingredients

    1 cup pink pitaya (dragon fruit), peeled and cubed 1/2 cup vanilla yogurt 1 cup unsweetened almond milk 1 tbsp chia seeds 1 tsp vanilla extract 1 tbsp maple syrup (optional) 1 cup ice cubes

Instructions

  1. 1. Add pink pitaya, vanilla yogurt, almond milk, chia seeds, and vanilla extract to the blender.

    Add maple syrup if using.
    Add ice cubes.
    Blend on high speed for 2-3 minutes until smooth and creamy.
    Let sit for 5 minutes to allow chia seeds to expand slightly.
    Stir gently and serve in glasses.

For a vegan version, use plant-based vanilla yogurt. Add a scoop of vanilla protein powder for an extra protein boost. Garnish with a sprinkle of vanilla bean seeds or a dusting of cinnamon for added flavor and presentation.
