Crunchy Chickpea Buddha Bowl Recipe
Ingredients:
1 cup brown rice, 1/2 cup roasted chickpeas, 1/2 cup cucumbers (diced), 1/2 cup carrots (grated), 1/4 cup red bell pepper (sliced), Garlic tahini dressing
Instructions:
Cook brown rice according to package instructions. Roast chickpeas at 400°F for 20 minutes. Combine brown rice, chickpeas, cucumbers, carrots, and bell pepper in a bowl. Drizzle with garlic tahini dressing.
Notes:
Add a sprinkle of sunflower seeds for extra crunch. Serve with lemon wedges.
