Ingredients
- 1 cup quinoa, 1/2 cup lentils, 1/4 cup spinach, 1/4 cup roasted chickpeas, 2 tbsp curry sauce, cilantro
Instructions
- Cook quinoa and lentils separately. Roast chickpeas with curry sauce. Layer quinoa with lentils, spinach, and chickpeas. Drizzle with extra curry sauce and garnish with cilantro.
