Ingredients

  • 1 cup farro, 1/4 cup cherry tomatoes, 1/4 cup roasted zucchini, 1/4 cup bell pepper, 1/2 avocado, 2 tbsp balsamic glaze, basil

Instructions

  1. Cook farro as per package instructions. Roast zucchini and bell pepper. Layer farro with tomatoes, zucchini, bell pepper, and avocado. Drizzle with balsamic glaze and garnish with basil.
