  • 1 eggplant (diced), 1 zucchini (sliced), 1 bell pepper (sliced), 1 onion (chopped), 1 cup polenta or quinoa, 2 eggs, 1/4 cup fresh herbs

Instructions

  1. Sauté vegetables until tender. Cook polenta or quinoa. Poach eggs. Serve vegetables over polenta or quinoa, topped with eggs and herbs.
