Ingredients

    (1 cup quinoa, 1/2 lb scallops, 1/4 cup cherry tomatoes, 1/4 cup spinach, 1/4 avocado, 2 tbsp garlic butter, lemon wedge)

Instructions

    (Cook quinoa. Sear scallops in garlic butter. Layer quinoa with scallops, tomatoes, spinach, avocado, and garnish with lemon wedge.)
