Ingredients

  • 1 cup quinoa, 1 cup cherry tomatoes (halved), 1 cucumber (diced), 1/2 cup Kalamata olives, 1/4 cup red onion (sliced), 1/2 cup feta cheese, 2 grilled chicken breasts or falafel

Instructions

  1. Cook quinoa according to package. Mix with tomatoes, cucumber, olives, and onion. Top with chicken or falafel and feta.
