- 1 cup quinoa, 1/4 cup cucumber, 1/4 cup cherry tomatoes, 1/4 cup red onion, 1/4 cup kalamata olives, 2 tbsp hummus
Instructions
- Cook quinoa. Dice cucumber, tomatoes, and onion. Layer quinoa with vegetables and olives. Top with a dollop of hummus.
