Harvest Grain Buddha Bowl Recipe

Ingredients:
1 cup farro, 1/2 cup roasted Brussels sprouts, 1/2 cup roasted butternut squash, 1/4 cup dried cranberries, 1/4 cup pumpkin seeds, Maple Dijon dressing

Instructions:
Cook farro according to package instructions. Roast Brussels sprouts and butternut squash at 400°F for 25 minutes. Combine farro, Brussels sprouts, butternut squash, cranberries, and pumpkin seeds in a bowl. Drizzle with maple Dijon dressing.

Notes:
Add crumbled goat cheese for extra richness. Use baby spinach as a base for more greens.
