Ingredients

  • 1 cup bulgur, 1/2 cup roasted vegetables, 1/4 cup chickpeas, 1/4 cup cherry tomatoes, 2 tbsp herb dressing, fresh mint

Instructions

  1. Prepare bulgur. Roast mixed vegetables. Layer bulgur with vegetables, chickpeas, and tomatoes. Drizzle with herb dressing and garnish with mint.
