Ingredients
- 1 cup quinoa, 1/4 cup cherry tomatoes, 1/4 cup zucchini, 1/4 cup yellow squash, 1/2 avocado, 2 tbsp lemon basil dressing
Instructions
- Cook quinoa. Sauté zucchini and yellow squash. Layer quinoa with tomatoes, zucchini, squash, and avocado. Drizzle with lemon basil dressing.
