Ingredients
- 1 cup quinoa, 1/2 cup zucchini, 1/4 cup cherry tomatoes, 1/4 cup chickpeas, 2 tbsp lemon herb dressing, fresh basil
Instructions
- Cook quinoa. Lightly sauté zucchini. Layer quinoa with zucchini, tomatoes, and chickpeas. Drizzle with lemon herb dressing and garnish with basil.
