Ingredients

  • 1 cup black rice, 1/4 cup mango chunks, 1/4 cup bell peppers, 1/4 cup edamame, 2 tbsp coconut dressing, lime wedge

Instructions

  1. Cook black rice. Mix mango chunks, bell peppers, and edamame. Layer rice with mango mixture. Drizzle with coconut dressing and garnish with lime wedge.
