Mediterranean Brunch Bowl Recipe

Ingredients

  • 1 cup cooked quinoa, 2 eggs (poached), 1/2 cup cherry tomatoes (halved), 1/4 cup cucumber (diced), 1/4 cup feta cheese, 2 tbsp Kalamata olives, 2 tbsp hummus, 1 tbsp olive oil, 1 tsp za’atar spice

Instructions

1. Layer quinoa in bowls. 2. Top with poached eggs, tomatoes, cucumber, feta, and olives. 3. Add a dollop of hummus. 4. Drizzle with olive oil and sprinkle za’atar.

Add grilled halloumi cheese for extra indulgence. Use tzatziki instead of hummus for variety.
