Mediterranean Shakshuka Bowl

A flavorful Mediterranean-inspired brunch bowl with eggs poached in a rich tomato sauce, perfect for sharing.

Mediterranean Shakshuka Bowl Recipe

Ingredients

  • 6 eggs, 1 can diced tomatoes, 1 bell pepper, 1 onion, 2 cloves garlic, 1 tsp cumin, 1 tsp paprika, 1/4 cup feta cheese, 2 tbsp olive oil, 1/4 cup fresh parsley, Salt and pepper to taste

Instructions

1. Sauté onion, pepper, and garlic in olive oil. 2. Add tomatoes and spices, simmer for 10 minutes. 3. Create wells in the sauce and crack eggs into them. 4. Cover and cook until eggs are set. 5. Top with feta and parsley.

Serve with crusty bread for dipping. Add spinach or kale for extra nutrients.
