Mexican Buddha Bowl Recipe
Ingredients:
1 cup brown rice, 1/2 cup black beans, 1/2 cup corn, 1/4 cup chopped red onion, 1/4 cup chopped bell pepper, 1 avocado, lime juice, cilantro
Instructions:
Cook brown rice and mix with black beans and corn. Layer in bowl with chopped veggies and avocado. Squeeze lime juice over and garnish with cilantro.
