Ingredients

  • 1 can chickpeas, 1 tbsp cumin, 1 tsp coriander, 1 cup couscous, 1 eggplant (diced), 1 zucchini (sliced), 1 bell pepper (sliced), 1/4 cup tahini, 1 lemon (juiced)

Instructions

  1. Roast chickpeas with cumin and coriander. Cook couscous. Roast vegetables. Serve with tahini dressing.
