Ingredients

  • 1 cup couscous, 1 can chickpeas, 2 chicken breasts, 1 tbsp harissa, 1 cup mixed vegetables (roasted), 1/4 cup dried apricots (chopped), 1/4 cup almonds (sliced)

Instructions

  1. Cook couscous. Roast vegetables. Cook chicken with harissa. Mix with couscous and chickpeas. Garnish with apricots and almonds.
