Pesto Quinoa Buddha Bowl Recipe

Ingredients:
1 cup quinoa, 1/2 cup roasted zucchini, 1/2 cup roasted cherry tomatoes, 1/4 cup bell pepper, 2 tbsp pesto sauce, fresh basil

Instructions:
Cook quinoa as per package instructions. Roast zucchini and cherry tomatoes. Layer quinoa with veggies and spoon over pesto sauce. Garnish with fresh basil.
