Potato Toast Buddha Bowl Recipe

Ingredients

  • 2 large sweet potatoes (sliced lengthwise and toasted), 2 eggs (poached), 1 avocado (mashed), 1/4 cup cherry tomatoes (halved), 2 tbsp pumpkin seeds, 2 tbsp almond butter, 1 tbsp honey, 1 tsp chia seeds

Instructions

1. Toast sweet potato slices until tender. 2. Arrange in bowls. 3. Top half with mashed avocado, cherry tomatoes, and a poached egg. 4. Top the other half with almond butter, honey, pumpkin seeds, and chia seeds. 5. Serve savory and sweet sides together.

Use a toaster oven for easier sweet potato toasting. Add smoked salmon to the savory side for extra protein.
