Ingredients

  • 1 cup brown rice, 1 cup roasted pumpkin, 1/2 cup chickpeas, 1/2 cup spinach, 1/4 cup feta cheese, 1 tbsp tahini, 1 tbsp maple syrup, Salt and pepper to taste

Instructions

  1. Cook brown rice as per package instructions. Roast pumpkin until tender. Combine all ingredients in a coconut bowl, drizzling with tahini and maple syrup.

Use roasted pumpkin seeds for an added crunch.
