Rainbow Veggie Buddha Bowl Recipe
Ingredients:
1 cup mixed greens, 1/2 cup shredded carrots, 1/2 cup red bell pepper (sliced), 1/2 cup yellow bell pepper (sliced), 1/2 cup purple cabbage (shredded), 1/4 cup pumpkin seeds, Lemon-tahini dressing
Instructions:
Combine mixed greens, carrots, red and yellow bell peppers, and purple cabbage in a bowl. Sprinkle with pumpkin seeds. Drizzle with lemon-tahini dressing.
Notes:
Use a variety of vegetables for a more colorful bowl. Toast the pumpkin seeds for added crunch.
