Ingredients

  • 1 cup cooked quinoa, 1 cup mixed roasted vegetables (zucchini, bell pepper, eggplant), 1/2 cup hummus, 1/4 cup cherry tomatoes, 1 tbsp olive oil, 1 tbsp lemon juice, Salt, Pepper

Instructions

  1. Cook quinoa; Roast vegetables at 400°F for 25 minutes; Combine quinoa, vegetables, hummus, tomatoes in a bowl; Drizzle with olive oil and lemon juice; Season with salt and pepper
