Roasted Veggie Quinoa Bowl Recipe

Ingredients:
1 cup quinoa, 1/2 cup roasted sweet potatoes, 1/2 cup roasted bell peppers, 1/4 cup red onion (sliced), 1/4 avocado (sliced), Balsamic vinaigrette

Instructions:
Cook quinoa according to package instructions. Roast sweet potatoes and bell peppers at 400°F for 25 minutes. Combine quinoa, sweet potatoes, bell peppers, red onion, and avocado in a bowl. Drizzle with balsamic vinaigrette.

Notes:
Add a sprinkle of pumpkin seeds. Serve with mixed greens as the base.
