Savory Quinoa Buddha Bowl Recipe

Ingredients:
1 cup quinoa, 1/2 cup mushrooms (sautéed), 1/2 cup zucchini (sliced and sautéed), 1/4 cup red onion (sliced), 1/4 cup goat cheese (crumbled), Balsamic vinaigrette

Instructions:
Cook quinoa according to package instructions. Sauté mushrooms and zucchini until tender. Combine quinoa, mushrooms, zucchini, red onion, and goat cheese in a bowl. Drizzle with balsamic vinaigrette.

Notes:
Add a sprinkle of fresh thyme. Use mixed greens as the base.

Ingredients

  • 1 Coconut
  • 1 Banana
  • 1 Cup of Berries

Instructions

Blend all ingredients and serve in a bowl.
