Shakshuka Buddha Bowl Recipe

Ingredients

  • 4 eggs, 1 can diced tomatoes, 1 bell pepper (diced), 1 onion (diced), 2 cloves garlic (minced), 1 tsp cumin, 1 tsp paprika, 1/4 cup feta cheese, 2 tbsp fresh parsley, Pita bread for serving

Instructions

1. Sauté onion, pepper, and garlic. 2. Add tomatoes and spices, simmer for 10 minutes. 3. Create wells in the sauce and crack eggs into them. 4. Cover and cook until eggs are set. 5. Top with feta and parsley. Serve with pita bread.

Add spinach or kale for extra nutrients. Serve with crusty bread for dipping.
