- 1 cup quinoa, 1/2 cup black beans, 1/4 cup corn, 1/4 cup bell pepper, 1/4 avocado, 2 tbsp salsa, lime wedge
Instructions
- Cook quinoa. Mix black beans, corn, and bell pepper. Layer quinoa with bean mixture and avocado. Drizzle with salsa and garnish with lime wedge.
