Raw Buddha Bowls: Southwest Quinoa Buddha Bowl Recipe
Ingredients:
1 cup quinoa, 1/2 cup black beans, 1/2 cup corn, 1/2 avocado (sliced), 1/4 cup red onion (diced), Southwest dressing
Instructions:
Cook quinoa according to package instructions. Combine quinoa, black beans, corn, avocado, and red onion in a bowl. Drizzle with southwest dressing.
Notes:
Add a sprinkle of shredded cheddar cheese. Serve with salsa and tortilla chips.
