Ingredients
- 1 cup quinoa, 1 cup roasted sweet potatoes, 1/2 cup black beans, 1/4 cup avocado, 1 tbsp lime juice, Salt and pepper to taste
Instructions
- Cook quinoa according to package instructions. Roast sweet potatoes until tender. Combine all ingredients in a coconut bowl and drizzle with lime juice.
Add a sprinkle of chili powder for extra kick!
