- 1 cup farro, 1/4 cup cherry tomatoes, 1/4 cup asparagus, 1/4 cup snap peas, 2 tbsp lemon vinaigrette, fresh mint
Instructions
- Cook farro. Lightly steam asparagus and snap peas. Layer farro with tomatoes, asparagus, and snap peas. Drizzle with lemon vinaigrette and garnish with mint.
