Ingredients

  • 1 cup farro, 1/4 cup cherry tomatoes, 1/4 cup asparagus, 1/4 cup snap peas, 2 tbsp lemon vinaigrette, fresh mint

Instructions

  1. Cook farro. Lightly steam asparagus and snap peas. Layer farro with tomatoes, asparagus, and snap peas. Drizzle with lemon vinaigrette and garnish with mint.
