Sweet Potato and Kale Buddha Bowl Recipe
Ingredients:
1 cup kale, 1 sweet potato (cubed and roasted), 1/2 cup chickpeas (cooked), 1/4 cup red onion (sliced), 1/2 avocado (sliced), Tahini sauce
Instructions:
Roast sweet potato cubes at 400°F for 25 minutes. Massage kale with olive oil until softened. Combine kale, sweet potato, chickpeas, red onion, and avocado in a bowl. Drizzle with tahini sauce.
Notes:
Add quinoa or farro for extra substance. Sprinkle with sesame seeds for crunch.
