Ingredients

  • 2 sweet potatoes
  • 1 can black beans
  • 1 red bell pepper
  • 1/2 cup corn
  • 1 lime
  • 2 tbsp cilantro
  • Salt, Pepper

Instructions

  1. Roast sweet potatoes at 400°F for 25 minutes
  2. Rinse and drain black beans
  3. Dice red bell pepper
  4. Combine sweet potatoes, black beans, bell pepper, and corn in a bowl
  5. Squeeze lime juice over the top
  6. Garnish with cilantro, salt, and pepper
