Sweet Potato Chickpea Buddha Bowl Recipe
Ingredients:
1 sweet potato, 1 can chickpeas, 1 cup kale, 1/2 avocado, 1/4 cup red onion, 2 tbsp hummus, lemon juice, salt, pepper
Instructions:
Roast sweet potato and chickpeas. Layer kale, sweet potato, chickpeas, avocado, and red onion. Top with hummus and a squeeze of lemon juice. Season with salt and pepper.
