Ingredients
- 1 cup farro, 1/4 cup cherry tomatoes, 1/4 cup roasted zucchini, 1/4 cup bell pepper, 1/2 avocado, 2 tbsp balsamic glaze, basil
Instructions
- Cook farro as per package instructions. Roast zucchini and bell pepper. Layer farro with tomatoes, zucchini, bell pepper, and avocado. Drizzle with balsamic glaze and garnish with basil.
