Ingredients

  • 1 cup cooked quinoa, 1 cup cherry tomatoes, 1 cup baby arugula, 1/2 cup mozzarella balls, 1/4 cup Kalamata olives, 1/4 cup roasted red peppers, 1/4 cup fresh basil leaves, 2 tbsp pine nuts, 2 tbsp balsamic glaze, 1 tbsp extra virgin olive oil, Salt, Pepper

Instructions

  1. Cook quinoa; Roast tomatoes at 400°F for 15 minutes; Assemble quinoa, arugula, mozzarella, olives, peppers, basil in a coconut bowl; Toast pine nuts and sprinkle; Drizzle with balsamic glaze and olive oil; Season with salt and pepper
